Abstract

This research was carried out in 2006 & 2007, on three peach cultivars, i.e., Flordaprince, Desert Red and Meet Ghamr to study the effect of cold storage on fruit quality and marketability. Weight loss, soluble solids content (SSC), and total sugars increased during cold storage and this increment was continuously observed during subsequent 4 days at 20oC. Firmness, acidity and phenols behaved inverse trend and this trend remained during marketing period. Symptoms of decay were visible in
fruits of all cultivars between 15 and 20 days of cold storage.
